I use a Mac and cheese recipe I really like, but it is lacking something and I can’t figure it out.
Ingredients:
* grated sharp cheddar cheese
* grated Monterey cheese
* whole milk
* unsalted butter
* mustard powder
* kosher salt
* cayenne
* breadcrumb topping
I make it stovetop and allow the milk to reduce to a thick cream consistency. Then combine the cheese and cooked macaroni and broil it to brown the breadcrumbs topping.
I’ve recently doubled the mustard powder and salt but it’s just bland. I feel it needs an extra seasoning, but I’m not sure. What would you add?
