I am a beginning chef and am looking for a decent chefs knife to start me off. Is there any good ones within a reasonable budget (around $100) and if so what are they or do you have to spend a bit more to get a good knife?

Also what is the difference between japanese and western style knives?

I am just starting to learn how to cook as I want to be a chef in the future. Are there any good books that give you all the techniques and stuff you need to know for cooking?

I love making these but I can never quite get the recipe right and all the one I have found online don't really have a specific amount of ingredients. Could I have a bit of info please?
