Question about butcher block countertop

So we got butcher block for the counters and stained it. Then we used a sealing oil. Do you recommend this over polyurethane? I really wanted something to paint on that was going to be an actual barrier that like hardened. With how many spills we get with the kids and the cat I’m worried that the wood will get ruined. I also know that we may remember to do the treatment the first few months maybe but we’re not gonna remember all the time. My fiancés being unrealistic about this. “Well just have to” aka “ILL just have to” and I can be honest and say I know I won’t. What do you suggest?
