I had a 100-year-old starter that was gifted to me and was using for my bread and it was great but then I accidentally threw it all. Now I’m in the process of making a new starter, I know it’ll take time until its ready but my question is will it be as good as the 100-year-old one I had? Should I just buy it from somewhere else rather than make my own from scratch
