Did some polishing with some diamond polishing paste on my Kikuchiyo x Ren W2 Gyuto today. Which is something I’m considering getting rid of due to me having 2 nakagawas sharpened by Ren. Last 2 pics are the before.
Anyways, now that I have your attention. Help me choose a nice low maintenance gyuto. I am considering a JNS Kaeru or a Tadafusa SLD.
The Kaeru piqued my interest due to the nice convex grind and seemingly great food release. The Tadafusa - while I don’t care for the Tsuchime pattern - is cheaper than the Kaeru. A little over $100 cheaper. I cook at home most nights of the week. Competent at sharpening with thinning experience. I do have more of a push cutting style, which is what worries me about the kaeru. The tadafusa I can’t find much information on if it’s more round, or has a decent flat spot.
Could you help a brother out and drop some pics of your Kaeru and Tadafusa gyutos with the edge flat on the board so I can see the profile?
Slowing slimming down on the Nakagawas I have as I find out which ones I like the best. This one is a Nakagawa ginsan 210mm gyuto. Length is about 196mm and height is 47mm. It hasn’t been used much and is in overall great condition and I have the original box with it.
The knife is great if you like / don’t mind shorter knives. Otherwise, that’s the downfall. If it was a true 210mm, it would stay with me. If you don’t like shorter knives, I would move on.
I am hoping to get $300 + shipping. If not sold by this weekend I will be open to some offers on it.
