Fried onions and jalapeños cheddar cheese
Ribeye with bell peppers and onions, pinto beans, rice.
Hard sear the pork (I used a Boston butt) in a Dutch oven.
Pull it, sauté shallots + garlic.
Deglaze with cider + splash vinegar + stock.
Stir in Dijon + Worcestershire + herbs.
Add pork back, surround with veg.
Liquid should be about 1/2 way up the side of the roast
Cover, cook low and slow (300–325°F) ~3–4 hrs.
Pull the meat and set aside. Put the rest on stovetop over medium. Add a tbsp of apple cider vinegar and simmer for 5 minutes or so.
Finish with parsley + adjust salt/acid.
