On the WSM. Tried for 275-320 F but first hour was sub 250, still getting the hang of my fire-building and heat control. Opted for foil over the water pan (no water) just for experimentation. Never trussed them like this before, but I was happy with how they turned out. Wet-brined over night, brushed with butter through the cook.
