Can I fan train these, or have I bought the wrong trees?

Was really excited about a month ago to have bought one each of a young dwarf cherry and dwarf plum tree. I would like to fan train them. Planted them next to a wall, got the vine eyes and garden wire in place, and bought myself an RHS book about pruning and training off ebay.
Just got down to reading the relevant sections of the book and realised these trees are already quite tall, whereas in the book fan trained trees seem to need to be trained into two leaders very low to the ground. Is it too late to train these into a fan? Or is it possible to create a fan shape from a single leader with many side shoots? Can I train them into another shape to tie into the wall? I don't think I have enough space to espalier them in a horizontal direction and was relying on diagonal growth. I have a super small garden so will need to keep em really compact.
