Bread tastes good and isn’t dense but definitely looking for improvements and tips
I’ve made a few loaves now and pretty happy with the results, however, after shaping the dough, leaving in the fridge and then bringing it out to bake after 12 hours it looks pretty flat and doesnt hold much shape; and i think thats wrong.
Shown are pics of crumb too which looks pretty dense but when eating its pretty light.
Below is my recipe and method for you to interrogate:
150g starter
750g organic strong white flour
510ml water
15g salt
Dissolve starter in water.
Mix flour in.
Leave for an hour.
Fold in salt.
4 x stretch and folds every 30 mins.
8 hours (ish) bulk fermentation (doubled in size).
Shape and fold.
Leave in bowl with floured tea towel overnight in fridge for 12-14 hours.
40 mins in dutch oven, then uncovered for 10-15 mins
