Extreme Delays Getting Biometrics Appointment Rescheduled

TL;DR: My fiancé had to miss her biometrics appointment on March 9th and it still hasn't been rescheduled.

My fiancé applied for OPT on February 15, and was scheduled for a biometrics appointment on March 9. Unfortunately, she was very sick that day and had to cancel. No new appointment was booked, and when she called initially, we were told to wait 30 days. After that elapsed, we paid for premium processing in the hope that would help, and a few weeks later called the premium processing line—they told us her premium processing was paused while she waited for a new appointment to be scheduled, and that by May 22nd she should have a new appointment. That timing means she will probably lose the job she had lined up for the summer, and also not be able to attend her grandfather's funeral, as she can't leave the country while the OPT is processing. We can see in the system that her request is pending, but it just seems insane that this should take so long (I know the system is a mess!) We are planning to get married soon and apply for a green card, but we're worried about her losing her right to work while that is pending.

Just wondering if anyone else has navigated this circumstance, knows why this might be happening, or has any advice. I saw someone mention on here that it is sometimes possible to try for a walk-in appointment; is this true? We would be going to the Hartford office, if that helps.
