Not losing weight

So I’m matickolously tracking everything I eat and drink cause I wanna drop calories and get shredded but ist just not dropping. I mean it is but it’s so slow and I’m eating so little.

For info I’m a 22 yr old male 178cm weighing 78kg

I started eating slow and low, so 500 kcal deficit, over christmas I regained everything I had lost so I started over again in february, doing the same deficit and it just did jack shit this time so I saw some influencers talk about aggresive cutting to get it over quick and my hope was to attain a 6 pack by summer, and I spoke with a fitness coach that said it would be no problem to get but I thought I can do this myself I’ll just aggresive diet CICO right?

So the plan was to drop it to 1800 kcal, but I wasn’t seeing any results, so I dropped down to 1600kcal it’s still not going lower only thing dropping is my expanditure, and I don’t get it cause last year I was loosing weight quicker eating 2300kcal like what?

I don’t count calories burned into my total kcal, I weigh EVERYTHING, yes dressings, oil, I even overshoot all the time 7 g prob 10 right, I’ve started not even using oil, I count drinks, everything sugar free, coffee yes, I’m counting it, I know I can’t lie to the scale so no reason to doing it to myself right, but it just seems fuckn impossible. Idk what I’m doing wrong, only thing I can think of is I’m not doing cardio but according to this sub it shouldn’t matter cause CICO right? Can someone pls help me understand what I’m doing wrong or fix this fuckery.
