Please help with my dogs anxiety

My husband and I took in a cane corso mix(his dad is cane corso and his mom is Bernese mountain dog) he is 1.5 years old. His old owner gave him away because she was about to have a fourth c-section and can’t keep up with his physical needs/ had a new baby when she got him and so never has had him as active as he should be. My husband and I got him a week and two days ago. He did absolutely fabulous and had no behavioral issues besides being on my side like glue and trying to get into the shower with me. He seems nervous of my husband, more so when he has his uniform on. The ladies husband was also in the army and we’ve gathered he either wasn’t very nice to his wife, kong(the dog), or both.
So Saturday, a week after getting him, my husband got a tattoo and we closed him out of our room. That night, he pooped and peed in the house. We got a baby gate to keep him off the carpet, and that was the night before last night when we left him downstairs, and he ate the cat food and chewed up my husband‘s work hat. Last night after work when I took him out he had diarrhea. That is expected considering he ate a whole bowl of cat food, well overnight last night he had two bouts of diarrhea and peed on the living room rug. I think that what is going on is mostly just separation anxiety obviously I don’t think the diarrhea was on purpose considering it was 100% liquid. I’m trying to figure out what to do about this nervousness that seems to stem from his lack of access to us, and how to stop these P accidents. Because I don’t wanna have to put him in the crate overnight. He does well throughout the day but overnight when we are home and he doesn’t have access to us. It seems to be a totally different story.thanks in advance!!
