Used the same recipe as this one except i subbed gf cheez its for the pecans. Used a tenderizing mallet to crush a third of them into crunchy bits and a food processor to turn the rest into a much finer powder (not quite a flour though)

Gluten free Costco fries (I think they aren't certified) and honey mustard

Recipe:

1 lb chicken breast butterflied and tenderized

Dredge:

2 tbsp Dijon mustard

2 tbsp bobs red mill garbanzo bean flour (red bag)

2 tbsp kewpie mayo

1 egg

Optional for dredge flavor:

1 tsp salt

1 tsp garlic powder

1 tsp onion powder

Whisk until fully incorporated

Pecan crust:

1 3/4 Cups pecans

Put them in a food processor or blender and repeatedly pulse mixing when necessary until there are no large chunks

Dredge the chicken tenders in the liquid, let it drip off a bit then put them in the pecans

Bake them (preferably on a wire rack but if you don't have one grease the pan) at 400 Degrees for 15-20 minutes. Internal temp should be 165 degrees fahrenheit
