First time skim coating question

Remodeling my kitchen here soon and decided to just go ahead and try out skimming the walls since I hated the texture. Have zero experience as of a few days ago lol.

First pic is what I’ve got it to now, second pic is about what I started with. I got it to this with one coat of all purpose and one coat of plus3. Needs a little more sanding, but I’m thinking I’m probably done with mud at this point? I don’t care if the walls are perfectly perfectly smooth, as I’ll be using a flatter paint for them and it’s already a lot better than what I had before imo.

Have read conflicting things about what to use next in regards to sealer, primer, etc and was wondering if you guys had any advice on what my best bet is? My thoughts are to use a high build primer to try and cover any small inconsistencies that might pop up - but open to suggestions since like I said, I have zero experience. There are so many choices for what to use next so just looking for guidance there and any feedback that may be useful.
