Location 726 Clementi West Street 2, #01-187, Singapore $5 portion Rating 6.8/10 Oyster omelette is my favourite food. It's a good that I had been eating since I was a child. To differentiate themselves each store has their own way of cooking their oyster omelette and pairing it with their own signature blend of chilli. Some choose a more heavily cooked egg which is more charred and crispy while some choose to cook it less for a more fluffy texture. I journeyingto a more secluded part of Singapore to try different styles of oyster omelette. Going in blind, I rate the taste of the dish in an effort to find the best oyster omelette in Singapore. I call it the oyster omelette expedition! ( Or OOE for short) Today I travelled 4 hrs to a hawker shop to taste their oyster omelette. The oyster was admittedly dry and emancipated. The egg was a paradox within itself. Part of it, like most oyster omelettes were fluffy and the other part was crispy. It had a very strange sense of balance. Majority of the meta like cooking the egg mostly fluffy or mostly charred. This stall however chose to cook it in a balanced way. The chilli was a great addition because it had lime within it which cut through the fatty taste and made the dish more addictive. The spice was relatively low but was compensated by the fact that there were 2 plates. Ultimately though, the dish was cheap and as such the ingredients were of poor quality. The quality of the ingredients in an oyster omelette directly impacts the final taste. The oysters they choose to use were frozen and lacked favour. This alone impacted the total evaluation as oysters themselves are a crucial part of the dish. If were to judge it in purely on taste without factoring other factors, I would not be able to give it anymore than 7 stars. That being said, I really enjoyed the experience. The owner took the food to me themselves which is rare in a majority of Singaporean hawker centres. For the price point of 3,4,5 dollars, I think that it's overall a hidden jem for oysters. Maybe going there for a late night snack or as a side dish would be nice. It's a pity but I don't think I'll be travelling there again since it's a 4hr commute.
