


This tea was a comforting delight. After a 15 second rinse, I started steeping for 10 seconds at a time. The first was translucent with a rich, dark color and the next two steeps got darker. The flavor was very present even in the rinse. It started out nutty and reminding me of old books. After that, a little woody flavor joined in and made for a more complex drink. The fourth steep started to mellow in flavor, and the fifth faded even more, so I started increasing the brew time. I mixed a bit of each of steeps 1 through 9 together and that had a full and well-rounded flavor of old books and mossy wood with just a touch of tannic bite.
8 grams of tea, 100 ml of 100°C (212°F) water for each infusion, 15 second rinse. Steeps 1-5: 10s. Then 15 seconds, 25 seconds, 40 seconds, 1 minute, 2 minutes, and 5minutes.
