I never had the animal-based version, so I can't say how these compare to those. These were delicious, and non-vegan friends enjoyed them. Most recipes I've seen use store-bought plant-based ground, but I enjoy making seitan from scratch.

I made a mistake setting the oven temperature and the cake ended up with a cracked dome. Rather than hiding the cracks, I put some edible gold leaf in them. My client loved the idea, so now I have to bake cakes with cracked domes 😂
