Looking for the most beautiful engagement rings under $2,000

I want to propose to my girlfriend within the next few months and I've been quietly doing research but I don't even know where to start. My budget is around $2,000 and I just want something that actually looks beautiful,  not cheap, just genuinely stunning.

She's pretty simple in her style. Doesn't wear a lot of jewelry but when she does it's always delicate and elegant. I've been looking at solitaires and maybe something with a small halo but I honestly can't tell what's worth it at this price range. 

Has anyone found the most beautiful engagement rings without emptying the savings?

Not trying to be condescending but this comes up almost every single day so figured I'd share.
Most people come in having done research and they fixate on getting the highest color grade possible, usually because they read that D is the best and assume anything lower is visibility yellow or dull. That's just not how it works in reality.
The lab diamond color is graded under very specific controlled conditions with the stone face down and compared against master stones. That is not how anyone actually look at a diamond in real life. In normal lighting, in a setting, on someones hand, the differences between say a D and a G are basically invisible to most people including me sometimes.
Where I do think color matters more is in larger stones and a certain setting styles. Anything over two carats and you might start to see it depending on the grade. Same with east west settings that expose more of the stone.
I just see a lot of people stretch their budget chasing a number on a chart that wont make a visible difference and I think its worth talking about more openly.
