Advice for being a new food court manager

Howdy y'all fellow costco peeps, I was just told today that I will become the new temp food court manager. Do you all have advice to give me? I've been a supervisor in both bakery and deli but I know the food court is a beast of its own. Thank you in advance.

I recently bought the Ikea metal knife holder (KUNGSFORS) and need help on making the top part not about to fall off whenever I grab a knife. Any ideas on how to fix it or am I missing a step.
