Need help with Analog Stick to Analog Triggers

Many old racing games, like Gran Turismo or Collin McRae Rally offer to use the right analog stick for throttle and breaking.
When trying to then map the right sticks Y-axis to the analog triggers (to emulate how modern console racing games do it), it seems that the actual analog range is almost lost.

I used an Xbox One and an 8Bitdo Ultimate controller (Both have very similar trigger travel lengths) and both controllers seem to have their inputs at the very end of their travel length.
Deadzone is set to 0, so that shouldn't be the issue.

Does anyone have any idea what i need to set up to have the entire travel length of the triggers emulate the entire length of the stick travel?

Randomly picked Supersonic Warriors (GBA) back up and...

...man, the game was much better in memory than it actually is :D
Is there *any* rhyme or reason to how melee attacks actually work?
Weak / rush attacks only connect if the stars align correctly, heavy almost always lose trades to the CPU for some reason, even guarding feels more random than it should be
This games melee combat feels like a complete coin flip...

Range play is super satisfying, but man... melee fights are weird...

I wouldn't say i'm a seasoned player, but i do have quite a few hours under my belt across the series. However, i never properly learned how to handle pull-along equipment without making a mess.

For instance, i just had a contract job in Zielonka. Plow field 54 with the Kverneland PW100-12.
I got the job done, but i also made quite the mess of it.>
Despite the myriad of tutorials and explanations, i've never encountered anything teaching how to properly handle different types of equipment efficiently.

If you know of anything, any pointers would be greatly appreciated!
