Utah-ish weeklong trip trails?

I’m heading out from Virginia to pick up my wife and 1 year old daughter (they are flying into Denver where I’ll pick them up ) at the end of May.

I’d like to do some routes that aren’t too technical but scenic for some dispersed camping/exploring. 2nd gen sequoia and a venture overland camper. I’m happy to stay parked for a couple of days at a time. Just want some space to decompress but not stress the vehicle out on too technical of terrain.

I’ve done the general area in a scenic rental car style and a built landcruiser, hit the Moab obstacles style, but looking for somewhere in between.

Thanks for any suggestions! My set up is good for self-sustained living for the duration.
