Last time I smoked a pork shoulder (4 lbs) I had to refill the smoker 3 times before the shoulder was ready. Took about 6 hours. I use a standard chimney to start the coal and burn off the “toxic part”. I used a full chimney each time. Once in the smoker, the coals burned so quickly and I had to keep refueling to maintain the heat. I have a standard 22” Webber smoker and use chunk wood, typically using 2 chunks at a time until they’re gone. I usually have all intake vents open and the exhaust 1/2 to fully open giving me a temp around 275. What am I doing wrong? Should I be using more wood or coal at a time or is my vent distribution off? It seemed like I had to check the smoker every 30 mins to make sure my temps were good and I still had fuel.
