Hi, I'm trying to read up on foods to seek out on my trip to Rome that aren't as well-known as gricia, supplì, maritozzi, but I'm not sure where to start looking. I've found Coda alla vaccinara and Saltimbocca alla romana but would really appreciate help on what dishes to try to learn about, books that talk about regional specialities, or any other tips on how to learn more about this topic.
