Recipe:
Ingredients
8oz cream cheese (room temp)
5 egg yolks & 5 egg whites
1/4 cup butter
1/2 cup milk
1/4 cup flour + 2tbsp cornstarch
3/4 cup sugar
Preparation:
• In a medium sauce pan over medium heat, combine milk, butter and cream cheese until smooth, then turn off the heat and mix in flour and egg yolks
• In a large bowl whip egg whites and sugar until stiff peaks form
• Fold in both mixes and pour them into a 7 inch springform pan lined tall with parchment paper (this will allow your cheesecake to grow like a soufflé)
• Place a pan with water in the bottom rack of the oven
• Place cheesecake in the middle rack of the oven
Preparation:

• Place cheesecake in the middle rack of the oven
Bake at 350°F for 20 minutes, then lower heat to 300°F and bake for extra 40 minutes
• Let it cool at room temperature before slicing.
• Store in fridge & Enjoy!
