PC keeps rebooting randomly during gaming

This started happening when I upgrading my machine from a 1080ti to a 9070xt. The issue will go away for months/weeks and then come back and happen EVERY single day with any game. At first I can go like several hours gaming until the machine just reboots, no error, no BSOD, no massive temp spikes, its like somebody just hit the reboot button on me randomly. After the first crash the issue will become more frequent happening every 30 mins to then like every 5...if I leave the machine off for a bit then itll get temporarily stable again. The only piece of hardware ive change was the GPU, the rest of the system is a

Intel i7 13700k with an undervolt

Gigabyte Aorus Elite AX Z790 mobo

32gb of DDR5 Gskill RAM with an XMP profile

Corsair Rm1000x PSU

I did notice that this became more problematic on 5/5 which was a day after Andrenline applied a new GPU driver update and prior to that I was pretty stable for hours and for months...ive read no issues on the latest drivers but I'm going CRAZY trying to figure out this issue if anybody has seen this before or has any suggestions I would be SUPER grateful! Please feel free to ask any questions
