First Successful Loaf

As an Alaskan this feels like an important milestone to me. A friend gave me starter last month, and this is the first loaf I've made that felt like it came out well. Followed the typical recipe.

- 100g starter
- 500g all purpose flour
- 350g water
- 1tsp salt

Made sure to feed the starter that morning.

In the early evening threw ingredients together. Folded every 30m for 2h. Let rise about 50%. Formed. Proofed in fridge overnight.

This morning heated dutch oven at 500F for 45m. Turned oven down to 425F. Put dough in covered dutch oven for 20m. Uncovered 20m.

Let rest for 2h on rack.

Sliced and buttered!
