48hr fermented pork udder

2 days ago i ate some raw pork udder and got leftovers so now it's fermented into this. It has a very strong smell and taste kinda bitter. Taste is strong and lingers in my mouth so i cant eat a lot in one sitting. What are the uses for this typa fermented organ?

My fridge is 7 degrees Celsius (max). I want to retain as much nutrients as possible and my goal is to grow as a teenager. I've heard that ideally milk should never be refrigerated but there would be risk of overfermentation no? Im planning to buy 10l of raw milk at once. Also is it that bad if my seller refrigerates the milk before selling it? (i think at about 2 to 4 degrees) If its bad I can tell them to not do that or I can find another seller if they still insist on refrigerating.

Whenever I ferment milk there's always these parts left sticking on the jar. What do I do to not waste it? Scraping it off just seems like a lot of work. Also should I refrigerate fresh milk or fermented milk and at what degree? (My fridges max is 7 degrees)

i think aajonus recommended sugarcane juice as a substitute for vegetable juice in southeast asia. Is it good to consume 1l a day? Very sweet but he says the sweetness is from the alkalizing nutrients or something.
