I normally bake 4 loafs for friends and family and hate how long it takes to bake 2 and 2, as i bake other things. So I've started to bake 4 loafs in the oven on 2 levels.
I open bake it with water sprayed into the oven, or just chuck in ice cubes.
Level one "lower" always gets flatter/moist, today the loafs were almost wet. For me it indicates the steam keeps them soft for long.
The top level has a nice spring and becomes more normal.
Both levels get coated with flour and the lower level the flour dissolved with further indicates the steam keeps it "wet".
I bake it kn 250c with top/bot heat. Conventional i believe its called, now the question is does anyone know how to get simular results on both levels?
Step by step:
All 4 loafs get added
After 20m the rotate and switch levels steam gets removed.
Continue until all are 96c and brown/golden.
