The mind reader has never played poker before and doesn't know the rules. They're playing one on one versus the greatest poker player in the world. They each start with $10,000 in chips. There are no bet limits.

If the mind reader tries to make an illegal move, the dealer will tell them they can't do that. Otherwise, they get no instruction, and no rules explained to them.
The mind reader can read the mind of the dealer and the pro player, to know exactly what they're thinking at all times. The mind reader only gets surface level thoughts and emotions, and not deeper motivations or subconscious thoughts.

The Pro knows that their mind is being read. They can attempt to think distracting and misdirecting thoughts, but the mind reader is pretty good at what they do, and they can almost always tell if someone is lying.
