I'm going to follow a recipe for braised pork belly but I wanna substitute that with textured soy. It's my first time using soy chunks and it says I should soak it for 20 mins beforehand. However, in the original recipe I boil the pork for a couple minutes, then sear it with all the spices before braising for an hour. I don't know if it's necessary (or possible) to sear the soy chunks, or if soaking in plain water beforehand is counterproductive for the braising process. I'm asking for advice so that I don't feed my sister inedible garbage.
