hi everyone ! i am trying to do research on matcha techniques and tools to upgrade the matcha in the cafe i work at. we currently use jade leaf and cold froth with the milk but i am not a fan of this method or powder and have been given free reign to modify our matcha making technique. i am interested in adopting the more traditional method of whisking with the chasen and bowl but was wondering if anyone had recommendations on good quality tools that aren’t crazy expensive? and has anyone had experience with a resin whisk(interested in its durability and upkeep compared to bamboo)?
has anyone also tried Rishi organic barista matcha? the price is not bad and it seems like it’s much better quality than jade leaf.
i would really appreciate any tips, tricks, advice anyone has, thanks !
