Pan seared salmon with asparagus for me and my girlfriend

Pan seared salt and peppered salmon basted with butter, lemon and garlic with a side of sautéed asparagus and carrot. I’ve been watching too much Hell’s Kitchen recently.

Simple veggie tacos I made. The shell is store bought. I haven’t gotten into making my own.

Ingredients:
- Taco shells (store bought)
- 1 large cucumber diced (about 100g - 150g)
- 6-7 cocktail/cherry tomatoes diced
- 150g can of corn or Mexico mix (corn, peas, bell pepper) (if you don’t have Mexico mix I recommend just corn and add a bell pepper diced)
- 1 Greek yogurt (400g)
- 1/2 lime juice or slightly more if the lime is small (taste after mixing!)
- salt, pepper to taste
- optional garlic powder and/or onion powder
- optional parmesan

Steps:

  1. Dice the cucumber and tomatoes and put them in a bowl as you’re dicing (If you didn’t have Mexico mix this is where you dice the bell pepper and add it too)
  2. Add the corn or Mexico mix to the bowl as well
  3. Add the Greek yogurt to the bowl
  4. Add the lime juice (start with the recommended 1/2)
  5. Mix a bit so the yogurt spreads around and gets between the diced veggies
  6. Seasoning with the salt and pepper and optional garlic/onion
  7. Mix well for about 1-2 min so you spread the seasoning around
  8. Taste and add more seasoning if needed and remix if you add anything
  9. Stuff the taco shells with the mix and serve! (This is where you add the optional grated Parmesan if you want to top it off)

It’s pretty light and tastes nice. The most important to the flavor is the right amount of lime and salt. You want to feel the lime and balance it with the salt. If it’s too limey add a bit more salt to balance out the acidity. If it’s too salty you need more lime although refrain from over salting as you usually need more of everything to balance it out.
