I think Minecraft should add an off-hand zone at the top-left, combined with an aim crosshair. This way you can actually use your off-hand — no need to crouch just to use a shield, you can place blocks, and you can eat food directly.

Second, I hate having to go into settings just to switch between first and third person view. So I think you should add a small button to toggle the view right beside the main controls.

Lastly, maybe Minecraft could also put a small button nearby to toggle between walking and sprinting.

(Similar to Blockmango)

Extra: double-tap an item on the main action bar to send it to the off-hand slot and more customize(maybe optional).

This would make the game way more playable for mobile players.
