Strict Carnivore for Gut/Autoimmune Healing - Rapid Weight Loss

I’m currently doing a very strict carnivore elimination approach to try to calm severe gut/immune-type issues (reflux, histamine intolerance/MCAS questions, possible SIBO, food reactivity, autoimmune-type symptoms).

Right now I’m only eating ribeye, eggs, butter/ghee, salt.

The problem: I’ve lost about 5 kg in 2 weeks, which feels too fast, and I’m struggling to keep calories up. When I try increasing butter or goat ghee, I start getting some diarrhea, so adding more fat is becoming difficult.

I’m also unsure whether dairy is hurting my healing process, especially if I’m trying to calm inflammation/histamine/autoimmune issues. Are there any dairy products (for example goat dairy, A2, fresh cheeses, etc.) that some people tend to tolerate better during a gut-healing elimination phase, or is it usually better to stay completely dairy-free for a while?

Would really appreciate hearing from anyone who has dealt with weight loss on strict carnivore while trying to troubleshoot histamine, MCAS, SIBO, or autoimmune-like gut issues. How did you keep calories up without making symptoms worse?

Hi everyone

I recently got a stool histamine result of 4059 ng/g (reference range 0–600), which seems very elevated. I’ve had lifelong morning sore throat, blocked nose, reflux/LPR-type symptoms, hiatal hernia, burping, and strong reactions to certain foods like aged cheese (severe reflux), tomatoes, garlic, onion etc. H. pylori was negative. I’m now planning DAO testing and working on a lower-histamine, reflux-friendly diet. Has anyone had similar histamine numbers or symptom patterns? Should I proceed with a DAO test? Am I officially HI or should I wait for DAO?

I am a bit lost and appreciate any help.
