[Selling], [CONUS] Thinning the herd - HADO, Kikuzuki Uzu, Nakagawa, Shibata, Kurosaki, Yoshikane

(PRICE DROP ON THE KUROSAKI SHIZUKU) After my post last night, I realized I need to thin the collection a bit and move a few knives that simply are not getting enough use. All knives have been carefully maintained and stored properly. Most have only seen a handful of uses.

Long time follower, first time poster. After getting my first Japanese knife six years ago I knew eventually I’d circle back when I wasn’t in school anymore. Been cooking a lot more the past several months and the hobby picked back up for me (and made my wallet a lot smaller). Here’s the collection as of now, I’m sure I’ll be adding more or swapping some out here and there. Glad I found this group!

Top shelf left to right:

Nakagawa B1 migaki 210 - love this. Heftier but not too much, moves easily and chops through everything.

Tetsujin Ginsan metal flow k tip gyuto 210 - my newest purchase and by far the craziest knife I’ve used. Laser of lasers but doesn’t feel flimsy at all, and the metal flow is gorgeous.

Masuda Yoshihide b1 Damascus gyuto 225 - probably my favorite knife of the bunch. Very very thin, but solid, and the Damascus pattern is unlike any other. Gorgeous knife. I rehandled it (and a lot of others recently). I find myself reaching for this the most of any of them.

Sakai kikumori kikuzuki uzu b1D 240- love the Damascus pattern on this one. I don’t use it enough but it is sure nice to look at.

Yoshikazu Tanaka W1D 210 - short Sakai knife but thin, tall, and a lot of fun for smaller preps.

Nakagawa B1D kiritsuke gyuto 210 - interesting geometry, little bit short at the heel for me, but it’s gorgeous.

Bottom shelf left to right Yoshikane skd tsuchime gyuto 210. Recently rehandled. I have not used it enough but it’s a classic.

Mazaki 210 migaki finish gyuto - I love this thing, it’s gotten a lot of use. I can’t get over how reactive it is. The patina changes every time I use it.

Hitohira togashi W1 stainless clad kiritsuke gyuto - cannot beat Hitohira fit and finish and togashi is underrated. Very sharp, very cool looking. The tahei makassar ebony handle with how narrow it is took some getting used to but I like it now.

JNS Tanaka W1 tall s grind - good deal on the JNS site and insanely thin BTE. Goes through sweet potatoes without flinching and without sticking or wedging. 10/10 sleeper for performance.

Hitohira togashi B2 korouchi 240 - my first Hitohira and still a favorite with a lot of use. Very very reactive patina which is fun.

Enjiki W2 gyuto 240 - more rustic and rough Hado style, with the OG hado sharpener. Good price, great edge, glad I have it.

Single shelf by itself:

Mazaki W2 bunka - cause bunkas are great and mince garlic better than any gyuto. Plus it’s a Mazaki so the feel using it is hard to beat.

Manaka x xinguo B1 kritsuke gyuto 240 - BIG knife, the sharpening from xinguo is extremely impressive. The kasumi on this in combination with manaka’s signature hammered finish is something for sore eyes. I have only used it a couple times and enjoyed it. Can’t wait to use it more. It’s very well done.

Manaka B1 210 gyuto - JNS sharpened. Very well done sharpening and a nice contrast to the one above. Love Maksim’s mirror finish on this.

Nakagawa B1 240 migaki gyuto - like the 210 but bigger and heavier. I reach for this one more than the 210.

Hatsukokoro shinkiro AS gyuto 210 - the workhorse feel on this got me interested in Sanjo style knifes, but I have not used it enough TBH. Have thinned it a little bit and it cuts like a dream, not that it didn’t prior.

Hado Kirisame 210 gyuto - the hado fit and finish is gorgeous.
