
Korean Galbi Marinade Recipe
I'm trying to convert the recipe in this video: https://youtube.com/shorts/SY6G5UnBIRk?si=qeELM2xqKCJWn\_d0 (no measurements given but would like it in parts, grams ideally). The video is the one by Danny Kim interviewing Chef Sungchul Shim on his galbi marinade.
At the bottom is my attempt at converting it but feel like I don't have the best judgement for the sizes of the containers used. I've made galbi marinade before but would like to try this recipe out and have a little more consistency when measuring things out.
Recipe: 1.5 part onion, 1 part garlic, 0.5 part pear, 0.25 part ginger, 1 part apple juice, 1 part pear juice, 0.5 part pineapple juice, 2 part soy sauce, 0.25 part yondu, 0.25 part sesame seed oil, 0.25 black pepper, 3 part sake, 1 part sugar.
I've omitted glucose and replaced soy sauce seasoning with more soy.
In short, how accurate is my transcription?
