I started my sourdough starter 2 to nearly 3 weeks ago. I initially started with only 1/2 tsp and 1/4 tsp. I learned from my previous mistakes of half a cup. Anyways, I have been feeding it Kirkland brand all purpose, unbleached flour. It's taking extremely long to rise, compared to my previous starter. My previous starter I had done was with Great Value bleached all-purpose flour and that after just 6 days was ready and rose in the typical 4-6 hours. I found it odd because I forgot to feed it on day until I got home, roughly 16 hours of not being fed, and it had bubbled and raised a good bit. I discarded half and fed it, thinking that by the time I woke up, it would have doubled. But, it didn't... It had some bubbles, but nowhere near where it was the night before. Any tips or suggestions?
