How do you guys get a handle on these things?

I'm just getting into mini painting and I decided to practice my paint thinning and brush control on some gunpla scraps before I paint on an actual mini.

So far, I have ran into several problems. I thin my paints (Citadel) to the consistency I see reccomended in video tutorials (Vince Venturella, Duncan Rhodes, Brushstroke Painting, etc) but after two thin coats, I get an uneven layer of paint with visible brushstrokes. I don't know if this is bad brush control or if I need to thin it more. And when I thin my paints a little more, I end up with more of a glaze. I apologise if this seems silly, but I really am having trouble wrapping my head around this.

And then there is the method. My process was to moisten the brush with water, thin my paint on the wet palette, twist the brush on the palette to get a decent tip, soak the excess off the brush on a kitchen towel, then paint. Is this why my results are shoddy? Is it normal that I can only get 4-5 brushstrokes before I have to repeat the process?
