Favorite FAT travel for Caribbean/Central America/MX with ~3 year olds? They're easy to please with the "cookie cutter" you get from a St. Regis as an example: Talking big pool, on the beach, high-end service that spoils kids w/ craft-like activities + goodies/toys.
We're fortunately not in the "I'M BORED!" phase of life so they don't require a ton of activities beyond that to be interested.
Note we're nixing: FS Anguilla, FS Ocean Club, Rosewood Baha Mar, Kimpton Seafire for various reasons (e.g., been there/switching it up, flights aren't great, etc.).
