these beans are 47 days old as of today. this is a delicious and unique expression from Shoebox that i’ve really been enjoying as pourover and soup. along with the listed notes, i get a gentle orange acidity and jasmine florality on the finish. the red tea is subtly earthy, yet the cup is entirely clean. what are you enjoying this morning/evening?

for nearly a year now, i’ve only used a v60, but i recently got an OXO rapid brewer for brewing soup. now i’ve been switching between settings 6.4 and 4.8 respectively. i’ve noticed when i switch from 4.8 to 6.4, my brew time changes and i also get a slightly more bitter cup due to the increased contact time. is this something that just happens or is something wrong? after changing grind size and brewing the first dose, the following brews are completely normal. thanks for any insight!

i haven’t had a mejorado until last night. for some reason, my drawdown time was 3:20, whereas my usual drawdown times range from 2:15-2:45. last night it tasted a little bitter, but i was using a higher temp than usual. however, i did everything as usual this morning, and i still got the same drawdown time, no bitterness this time. same grind size and everything, same dose and ratio and pour rate, etc… this particular mejorado is the Hakuna Matata from Shoebox. it tastes great in this second cup, but i’m mainly jusy curious and confused about these slow drawdowns all of a sudden. there also seems to be more retention visible in the catch cup of my ZP6 than usual, but it isn’t doing this with other coffees. thanks for any insight!
