Global Tech to PSU Specialist Officer Transition?

I'm 40M being working tech industry since last 17+ years. Currently in Top tech company in the world (since last 6 years), however lately work culture has been toxic due to AI shift. Every day 14-16 hours of work and with super critical feedback all the time and no hopes of promo or growth in the current role. I'm diabetic since last 10 years and worried about the health as I couldn't find time for fitness given late night meetings and difficult to wake up early. I'm wondering if moving to PSU specialist officer roles would give better stability and work life balance. I understand there will be 60-70% of pay cut but sustainability is something I'm concerned about, and it will for sure impact the health. Would like to hear the thoughts and perspectives?
