Signed a contract and received another offer 30 mins later

No job currently.
I've been interviewing at company 1 for a while and accepted the offer, they send the contract with a delay (1 day before starting) and in the meantime I had another process with company 2, so I decided to let them know that I need more time to think. They took the contract and said when I decide, to contact them.
In the meantime company 2 said that it was all great, but there are some internal alignments and not sure if can proceed now. So I contacted company 1, they sent the contract, I signed, then 30 MINS LATER I've got the other job.

We are talking about a full time contractor position B2B contract. Company 1 pays less, no benefits at all, no days off, not very stable (accepted just to have something). Company 2 pays better, days off, benefits, and seems stable.

How do I handle this situation?

2 offers - How to handle?

I had an offer to company 1, I had to sign the contract but the recruiter responded very slow and in the meantime I've proceeded to interviewing to company 2. When the recruiter from company 1 responded with the contract, I've had 1 more stage (from 5) at company 2. I don't like company 1, and I really like company 2. So I decided to tell company 1 that I would need more time to think as something came up and I would like to make an informed decision. They got back the contract and said to contact them when I made up my mind.

I've let company 2 know that I have another process but they are my first choice, and they scheduled quicker the last interview. The recruiter called me to tell that I've finished the process, but to wait a bit for them to make the decision as some people are on vacation (from Friday to Monday afternoon). The recruiter asked me several questions like if they don't come back by Friday if they will lose me, advised me to wait for them, why I want this, etc. I've pushed if they can do it by Friday, and to not enter in numbers and to not feel like I'm gonna accept in company 1, I've told that I'm in discussions about the final offering and then the recruiter started to ask me why so much urgency by Friday if I don't have the final yet? And I suspect they started to suspect me of gambling.

Now I suspect company 1 might not even get me the offer anymore, and I might lose company 2 also. What do you think? How is safest to play now?
