Started new job and I'm baffled

Took a bit but found a new job after leaving my last one for having no growth potential, but man, the new team has me baffled. But now I'm wondering if its me...

  1. They put all fried items into one basket per order. Meaning, if someone ordered wings, strips, and fries, then all three items go into the same basket. They pull it when the first items is done (the fries) and serve the lot because "they're already cooked."

  2. Specs are "suggestions" and don't need to be followed. As long as the same items are on the plate, it doesn't matter how they look. Two cooks follow the specs, three do not.

  3. The chef makes the schedule, but then the cooks cross it out and write in the hours they are "actually" going to work because "they need us more than we need them."

  4. There is no mapping for anything--coolers, freezers, line stations... its a free for all and hide and seek for things.

This place has been open for 10 years and the team has been the same make up for 5 years. The chef says that they need processes, which is something he hopes I create for them, but also says that the team works well together.

This is like out of the frying pan and into the fire. But its making me wonder if I just expect too much.
