Made something by accident and want to do it again

Hey,

A few month ago, i tried to make mead by putting 1kg honey with 3L water and using k1-v1116 yeast.
As i'm cheap, i tried to stop fermentation by successive racking (saw it on a YT video). Every 2 weaks I poured the mix in another big plastic bottle with a funnel, and did it a few time. When it seamed clear I put it in swing-top bottles and let it "age" for a few weeks before opening.

My problem is : I got exactly what i wanted (sweet and sparkling, everyone loved it) but every information i'm finding now on the web is telling me it's not possible, and i can't find information anymore on this successive racking technique. As of what i understand, it should not have worked as the bottom layer is only dead yeast, and active yeast should have been still everywhere. (no gravity reading, nothing else to stop fermentation, and using a pierced baloon as an airlock)

So my question is : does anyone know if this is normal and possible to make again, and why was it not dry and still (as the 18% ABV of my yeast is high and should have consumed all or the sugar before bottleing). Could it be the contact with the oxygen during the rackings ? The use of tap water ?
