We opened less than a year ago so some things have been new for me. We recently had an issue with drain flies as they had nested in our grease trap. Thankfully, it was resolved promptly after contacting our pest control people and grease trap cleaning company. I keep eyeing Fly Zyme as a way to upkeep our drains on our end. I plan to make it a bi-weekly/after hours cleaning procedure to prevent further issues as much as possible but I am wondering if it’s safe and compliant for restaurants in NYC.
