Chicken Fajitas

Red bell peppers and onions (my wife doesn’t like green bell peppers in fajitas) with pre-marinated chicken breasts from H‑E‑B (local grocery chain here in TX). I did the peppers and onions first on medium heat, placed to the side, raised the temp to medium-high and cooked the chicken. It comes in whole breasts. I cut them in half sideways then cut strips on the bias. Added additional salt/black pepper/cumin/garlic and when almost done, added the peppers and onions back in the skillet. Finished with a little parsley (ran out of cilantro) to finish.

I retired last week at almost 66. I have used my cast iron skillets more in the past four days than I have in weeks. They are going to take over as my primary skillets from now on. Gotta figure out what the next meal will be!

The end of a nice Sunday breakfast

Jimmy Dean patty sausage and a cheese omelette in the small skillet, and Potatoes O’Brien in the large one. All cleaned up and ready for the next dish.

One thing about CI. It makes you truly feel being part of the entire process of creating a meal. The time to preheat. The cooking. Cleaning afterwards. Proper storage. Makes it a bit more satisfying.

Audie Murphy Westerns

When it comes down to the Top Ten Actors in Westerns of All Time, it’s highly unlikely you’d see Audie Murphy’s name listed amongst Wayne, Eastwood, Stewart, etc. Yet I have always enjoyed him in westerns. Destry, Seven Ways From Sundown, Ride Clear of Diablo, and (what I think was his best role and performance), No Name on the Bullet.

Maybe because he was born and raised in Texas and could handle a gun. I don’t know. I can’t really put my finger on it, but he was an actor whose Westerns I’ve always enjoyed.
