Hello Contractor UK, I hope this is the right subreddit, apologies if not.

Recently a family member suffered a fire in the loft and unfortunately was uninsured (England based)

After going through contractors they have seemingly found one, but I had some worries about how they are approaching it.

A subcontracted scaffolding company is insisting on cash only, provided by my relative. While this triggers red flags, there is the need for the work to start. What should I ask for this and what backup if any would be required to prove proof of purchase of services?

We have yet to get a contract, however after some push back we are receiving a "quotation contract" What is the legal watertightness of this?

Apologies, we are very much in the dark here and I've not had much experience with builders.
