
Black Tea Ice Cream with Boba
I was inspired by the boba ice milk bars and thought I'd do something similar but with black tea instead of brown sugar. This ended up being one of my favorite recipes! The pearls add a very interesting texture when cold. I did a respin for a more milkshaky texture but you can do without if you like it firm.
Recipe (for the deluxe):
- 1 tbsp black tea powder
- 1 scoop whey protein powder unflavored
- 1 tbsp sugar
- 4 tbsp Splenda
- 500ml 2% milk
- 1/8 tsp xanthan gum
Add as mix-in
- Tapioca pearls (I used 25g of the dry kind that you boil at home)
Lite ice cream setting, optional respin, then add pearls and do a mix-in spin. Roughly 570 calories for the tub.
