I used some very crystalized honey that I otherwise couldn't use for anything, and it looks very different from my previous mead brews. I'm familiar with brettanomyces infection as I've had it before, and it doesn't look quite the same as that either. I'd rather not chuck it if it's still viable but I'm a little worried.
