Chefs- I Need Some Advice.. (Relocating To Denver)

I am a cook with 3 years of experience and have been trying to relocate from Phoenix to Denver. I have received several callbacks and emails offering prep position interviews.
The issue is they all require their interviews to be in person, which makes sense, although I am trying to be smart and secure a job before moving.
As far as start dates on applications & initial phone calls, I have said June 15th.
When I inquire about online or zoom interviews due to me relocating, they say “just come in once you get settled.”

Unsure if I should continue reaching out in hopes of an over the phone/video interview or just move and hope my top options are still hiring.
